MACRO-FRIENDLY RECIPE: BROCCOLI CHEDDAR CASSEROLe

If you’ve been following our nutrition education and macro-friendly recipes for a while,  you know that we love to make meal prep simple and whole-heartedly believe in using easy ingredients to do so! Many of our clients are busy individuals working full-time jobs, managing their time with kids and family and traveling, so time is of the essence. That’s why we continue to create easy, no-hassle recipes from easy pantry staples and frozen foods so that you can work towards your nutrition goals while still spending your time doing the things you love. This week’s recipe is no different and a really great one for easy meal prep with hearty servings.


LOW-CALORIE BROCCOLI CHEDDAR CASSEROLE

PREP TIME: 10 minutes || COOK TIME: 45 minutes || MAKES: 6 servings

WHAT YOU NEED:

  • 450g Crockpot shredded chicken, cooked 

  • 2 packets Ben’s Original Ready Rice, broccoli cheddar flavor

  • 340g Cauliflower rice, frozen

  • 340g Broccoli, frozen

  • 340g California blend veggies, frozen

  • 225g Sliced white mushrooms

  • 1 can Cream of mushroom condensed soup

  • 3 eggs

  • 112g shredded cheddar cheese

WHAT TO DO:

  • Preheat the oven to 350 degrees fahrenheit. Spray a 9 x 13 casserole dish with cooking oil spray.

  • Prepare rice per package instructions. While rice is cooking, heat a medium-sized skillet over medium heat. Add mushrooms and sauté until browned. Remove from heat.

  • Add chicken, mushrooms, rice, cauliflower rice, cream of mushroom soup and eggs to a large mixing bowl or bowl of a stand up mixer, use the paddle attachment to mix ingredients until well combined.

  • Layer frozen veggies and then chicken mixture in a casserole dish, using a spatula to press it down and make it even and smooth.

  • Cover with foil and bake for 40 minutes. Remove foil and sprinkle with cheese and bake for an additional 5-7 minutes or until the cheese is melted. Remove from the oven and let cool a few minutes before serving.
