Easy Chili-Lime Watermelon Salad: A Macro-Friendly Picnic Recipe​

 

With the Fourth of July only a few days away and the guarantee of a party or two this week, we wanted to make sure to share one of our favorite macro-friendly side dishes that’s quick to prepare and is yummy, even for those who don’t track macros! Inspired by a watermelon and basil salad I had a few weeks ago, I played around with some additional ingredients to make a simple, patriotic side dish with a kick. Enjoy!


PREP TIME: 10 MINUTES
MAKES 10 SERVINGS
MACROS PER SERVING (100g): 2P/1F/10C

What you need

  • 700g cubed watermelon (about 5 cups)

  • 200g blueberries (about 1 1/2 cups)

  • 60g crumbled feta cheese (about 1/2 cup)

  • 10g honey (about 1 teaspoon)

  • Juice from 2 limes

  • Finely chopped mint leaves

  • Trader Joe’s Chili Lime seasoning (or chili powder and salt)

 

WHAT TO DO

  1. Cut watermelon into bite-sized cubes and place in large bowl with blueberries.

  2. Add honey, lime juice, and chopped mint to fruit and stir

  3. Season mixture with Chili Lime seasoning to taste

  4. Once fruit is evenly coated, gently fold in crumbled feta

  5. Top with more chopped mint
