MACRO-FRIENDLY RECIPE: QUICK AIR FRYER QUESADILLA

 

Praise those who created the air fryer! If you love crispy, fried foods but don’t want the calories that come along with them, the air fryer is the magic machine that allows you to have the best of both worlds. It’s great for creating crispy “fried” foods without using any excess oil or cooking fats. If you don’t have one yet, we highly recommend getting one or borrowing from a friend (so you’ll immediately realize you need one too).


Although the air fryer is great for popping in ready-made frozen foods, like french fries, chicken fingers and veggies, it can also be great for creating that crispy texture found in many favorite Mexican dishes. This week’s post is a fun recipe for a low-calorie ten minute quesadilla. The best part is that most of the ingredients are from the prep in our free Everyday Macros cookbook.


CRISPY AIR FRYER CHICKEN QUESADILLA

PREP TIME: 5 minutes | COOK TIME: 10 minutes | MAKES: 1 serving

WHAT YOU NEED:

1 Ole Xtreme Wellness whole wheat tortilla

75g Crock-pot shredded chicken (cooked)*

28g Shredded mexican cheese

35g Black beans

50g Pepper and onion mix (cooked)

30g Plain nonfat Greek yogurt

5g Lime juice

5g Fresh cilantro

5g Chopped green onions

NOTES: For our recipe, we used our crockpot shredded chicken. You could also use already-pulled rotisserie chicken in the packaged foods section or canned chicken. 

WHAT TO DO:

  1. If your air fryer requires pre-heating, pre-heat it to 350 degrees. 

  2. In a small bowl, combine the chicken, black beans and pepper and onion mix. 

  3. Place the tortilla flat in the basket of the air fryer. Sprinkle half of the cheese over half of the tortilla. 

  4. Add the chicken mixture on top of the cheese. Cover the chicken mixture with the remaining cheese and fold the tortilla in half. 

  5. If your air fryer has a rack, place the rack over the quesadilla to keep it in place. Otherwise, you can use toothpicks and a metal utensil (just be sure to use tongs when removing the utensil as it will be very hot!)

  6. Set the air fryer for 350 degrees and cook for 8-10 minutes or until crispy. Carefully remove the quesadilla using a large spatula (and any rack/utensils using tongs).

  7. While the quesadilla is cooking, combine Greek yogurt, lime juice, cilantro and green onions.

  8. Cut the quesadilla into quarters and enjoy with Greek yogurt dipping sauce!

TRY THIS:

Want to make tostadas or taquitos instead? Using the same ingredients as above, substitute the whole wheat tortilla for (3) Mission white corn street taco tortillas. 

FOR TOSTADAS: lay open tortillas on the airfryer rack and sprinkle each with cheese. Evenly distribute the chicken mixture across the tortillas. Roast for 5 minutes at 350 degrees or until crispy. Top with Greek yogurt dipping sauce.

FOR TAQUITOS: Sprinkle each tortilla with cheese and evenly distribute the chicken mixture across the tortillas. Roll tortillas and secure using toothpicks. Carefully place taquitos on the airfryer rack and roast for 5 minutes at 350 degrees or until crispy. Enjoy with Greek yogurt dipping sauce.
